Honey Banana Nut Cake

Granny Ruth | from her Aunt Dorothy’s Family Recipe

Bake: 350°F for metal 9″metal pan
or 325°F for 9″ glass pan
Time: 30-35 minutes
Servings: 8 slices of cake

Ingredients
The Cake
□ ⅔ C Butter
□ 1½ C Sugar
□ 2 Beaten Eggs Yolks
□ 1 C Mashed Bananas
□ 2 C Flour
□ 1 tsp Baking Powder
□ 1 tsp Baking Soda
□ ½ C Hot Water
□ 1 tsp. Vanilla
□ 1 C Chopped Walnuts
□ 2 Beaten Eggs Whites

Honey Icing
□ 1 C Honey
□ 3 Egg Whites

Directions
The Cake
Step 1
Cream butter and sugar together

Step 2
Add the beaten egg yolks and mashed bananas

Step 3
Sift flour, baking powder and baking soda

Step 4
Mix in alternately with hot water, and add vanilla

Step 5
Fold in chopped walnuts

Step 6
Fold gently into 2 stiffly beaten
egg whites

Step 7
Bake cake mixture at 350°F for metal 9″ baking pan or at 325°F for glass baking pan
After baking and let cake cool completely before frosting

Honey Icing
Step 1
Beat egg whites until stiff, drizzle honey in until completely mixed

Step 2
Frost cake and decorate as desired.
Enjoy!

*Note: line pan with wax paper and spray with baking spray prior to adding the cake mixture)
